Topic: Virtual Server 2005 R2
I am downloading the install for Virtual Server but it states that although it will work on XP Professional there is a caveate that says non production only. What does that mean?

The term non production simply means that they wont support it. It will work on your XP Pro but you can't use it in normal working environments.
I tried this myself yesterday it installed fine on an XP machine but you will need to install IIS before you start or your config panel wont work.
I will try that today. Did you actually get any VM's set up yet. I assume by what you said that its configured via a browser?

The IIS is the internet information services, and yes it is the service behind Microsoft web servers. Since the VMs run in a browser in the host or client machine then yes you need the IIS to send out that information.
